Fire Roasted Tomato And Chipotle Salsa

This is my all time favorite salsa recipe. I think it is because I love chipotle peppers so much. It’s so yummy!
Ingredients -

4 Medium Ripe Tomatoes
2 Tablespoons Extra Virgin Olive Oil (divided )
1/4 Cup Sweet Onions (chopped)
1 Tablespoon Fresh Lime Juice
1 Teaspoon Kosher Salt
3/4 Teaspoon Chipotle Chile Pepper
1/2 Teaspoon Ground Cumin
1/2 Teaspoon Garlic Powder

 
Preparation:

1. Rub the tomatoes with 1 tablespoon of the olive oil.

2. Grill the tomatoes over high heat.

3. Turn frequently until tomato skin is charred.

4. Finely chop the tomatoes.

5. Mix the tomatoes with rest of the.

6. Cover with saran wrap.

7. Refrigerate for 1 hour.

8. Serve.

Tomato Information

If you have ripe tomatoes don’t store them in the fridge. Cold takes away from the flavor.

Lycopene is higher in cooked tomatoes than it is in fresh tomatoes.
