I love this salsa because it’s not like the classic version we are all used to. It’s a bright new version and my family just adores it.
Ingredients -
1 Can Sliced Peaches (drained and diced, 15 ounce)
1 Medium Ripe Avocado (diced)
1 Tablespoon Lime Juice
2 Cups Tomato (diced, seeded)
1/4 Cup Onion (diced)
2 Tablespoons Fresh Cilantro (minced)
1 tablespoon Cider Vinegar
1 teaspoon seeded chopped Jalapeno Pepper*
1 Garlic Clove, minced
1/4 teaspoon Salt
Preparation:
1. Combine the peaches, avocado and lime juice in a medium bowl.
2. Add the tomato, onion, cilantro, vinegar, pepper, garlic and salt.
3. Toss until combined.
4. Refrigerate for an hour.

Safety with Peppers
Avoid touching your face and your eyes when you are working with hot peppers. When you go to cut and de-seed them you don’t want to get the heat on your hands and then in your eyes. Be careful.

Cilantro
If you don’t like cilantro this recipe is really good with flat leaf parsley as well. It changes the flavor and texture a bit and is not as strong as cilantro, so it’s great for those of you that aren’t cilantro fan’s. I know you’re out there.
